Easy Mung Bean Soup
Some people find mung beans easier to digest than other beans or lentils. This is a hearty, warming soup that you can freeze in single portions and enjoy whenever there is little time to prepare a meal.
Ingredients
1 cup dried mung beans
1 onion, chopped
2 cloves garlic, minced
2cm piece of fresh ginger, grated
1 tsp vegetable bouillon powder
3 cups of water
Freshly milled black pepper
1 tbsp creamed coconut (optional)
Serves 4
Method
1. Soak mung beans overnight, wash and drain.
2. Sauté onion, garlic and grated ginger, add mung beans with three times the volume of water and cook for 25 minutes until tender, along with some vegetable stock powder, black pepper, a variety of preferred spices and a little creamed coconut. Add more water if required.
3. Cool a little before blitzing in a blender. Reheat, then serve and enjoy.
